Sweet Potato Breakfast Hash


Here's a simple recipe that will help you incorporate veggies into your breakfast! It takes a little time and prep work, but it is definitely worth the extra effort!

To get started, simply dice up a sweet potato into tiny pieces. If you meal prep, do this at the beginning of the week, keep in a tupperware and store in the fridge.

Next, spread the small pieces onto a baking sheet lined with foil. Drizzle over a small amount of olive oil, then season with sea salt, pepper and chili powder. The chili powder is the key ingredient here, I love the smoky flavor on this breakfast side dish. Toss it all together and make sure each piece is coated.

Bake in the oven at 425 degrees for about 20-25 minutes. Keep your eye on them while baking, you'll want the small pieces to get nice and toasty, but not burned.

Serve as a side dish to whatever meal you are preparing. My favorite way to serve this dish is with an over easy egg on top.
